January 1



New Year's Day dinner ~ baby back ribs, roasted potatoes, onions & brussels sprouts, and Texas caviar (gotta have black-eyed peas!).

Texas Caviar

1 yellow bell pepper, seeded and chopped
1 orange bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
3 jalapeno peppers, seeded and chopped
1/2 purple onion, chopped
1 (15-ounce) can black-eyed peas, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can whole kernel corn, drained
1 Tablespoon minced garlic
½ teaspoon ground coriander
1/2 cup vegetable oil
1/2 cup apple cider vinegar


Mix everything together in large bowl.  Cover and chill approximately 2 hours.  Serve with tortilla chips.

I ended up making a version of this for New Year's Day, and it was much better than Hoppin' John!
