blueberry muffins

½ cup softened butter
1 cup sugar
2 eggs
1 teaspoon vanilla
½ cup milk
2 cups flour
1 ½ teaspoons baking powder
¼ teaspoon salt
1 cup blueberries
Cream together sugar and butter. Add eggs and vanilla.
Combine flour, baking powder and salt.
Add milk and flour mixture alternately to creamed mixture.
Fold in blueberries. You can use frozen blueberries.
Spoon into baking cups in muffin pan.
Combine 2 Tablespoons sugar and ½ teaspoon nutmeg.
Sprinkle on muffins before baking.
Bake at 350*F for 25 to 30 minutes.
Yield 12 muffins

recipe prepared, ready for the oven
chicken mornay
8 large fresh broccoli spears, cooked (or frozen broccoli spears)
8 large slices chicken breasts, cooked
3 cups mornay sauce
1 cup shredded cheddar cheese
1/4 teaspoon paprika
Arrange broccoli in a 9x13 baking dish. Cover with chicken. Top with grated cheese and pour mornay sauce over. Sprinkle with paprika. Bake in a 325 degree oven for about thirty minutes.
mornay sauce:
3 Tablespoons butter
3 Tablespoons flour
1 cup chicken stock
1/8 teaspoon cayenne pepper
1 cup shredded cheddar cheese
1 cup cream
To make sauce, melt butter slowly. Add flour, then chicken stock, stirring constantly. Add cayenne pepper and cheese. When cheese is melted, slowly add cream.
