yum, yum, yum! I just made chicken enchiladas last week, used heavy cream in the sauce so you just KNOW it wasn't a weight watcher dish. :)

I made a pan of these enchiladas for a friend and had enough of everything left to make another pan. I'll have to post the recipe on my other blog once I write it out! I baked the chicken breast pieces in 16 ounces of salsa and 4 ounces of chopped green chilies. I shredded the chicken and put a spoonful of chicken mixture and shredded cheese down the center of an enchilada sauced softened corn tortilla. Place in baking dish seam side down; additional cheese, sliced black olives and chopped bell pepper sprinkled over the top. Cover with foil and bake about forty minutes.
